I am sorry to say but somebody told you wrong. Expanded Polystyrene (EPS) does not give off gasses over time. Only Urathane panels do. EPS is a pentane based product that has any lingering gases removed while they sit in a hot box for about a week. Your R-value won't change.
You can also do cathedral ceilings if you'd like with SIPs. We are currently working on a poolhouse that was perfect for SIPs.
The Oriented Strand Board (OSB) does need to be protected from water just like any other wood. You should look into SIPs when you decide to build. You could give us a call and send some drawings. I'd love to help you out.
When you built your "green" home what type of shell did you have? Are you still building?
